Chicken Quesadillas

Chicken Quesadillas  are a quick easy meal to prepare. I make them almost every weekend.

What You Need


1/2
lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

1
can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained

4
cups shredded cooked chicken breasts

4
 green onions, thinly sliced

 flour tortillas (10 inch)

Make It


COMBINE VELVEETA and RO*TEL in 1-1/2-qt. microwaveable bowl. Microwave on HIGH 5 to 6 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 3 min. Stir in chicken and onions.
HEAT large nonstick skillet on medium-high heat. Spoon about 1/2 cup chicken mixture onto half of 1 tortilla; fold in half. Add to skillet; cook 1 min. on each side or until golden brown on both sides. Remove from skillet. Repeat with remaining tortillas and filling.
CUT into wedges.

Substitute
Prepare using 2% Milk VELVEETA.

Garnish with chopped fresh tomatoes just before serving.

Salsa



Today I am making homemade chunky salsa


One thing that I have noticed is that it can be hard to find chunky salsa.
Because of this, I like to make my own.



Recipe

3 Large Tomatoes
1 Small red onion
1 Bundle of Cilantro
A pinch of salt
Lime Juice




Cut the tomatoes and about 3/4 of the onion into small pieces. 
          When cutting the tomatoes, I throw the insides away.
Pull the leaves off of 1/2 the bundle of cilantro and cut into little pieces as well.
Mix all three into a plastic storage container.
Sprinkle salt over the salsa.
Add roughly 3/4tbs of lime Juice.
Mix again.
You're Done!


Now grab your tortilla chips and dig in!!!




This is how mine usually looks when I'm done.
This whole recipe is really made to atste. Some like a lot of onions or cilantro and some don't.
This recipe is easy to add more or less of what you really like.
