Pizza Chicken


This is once again a low carb recipe. 

 


PIZZA CHICKEN
1 boneless chicken breast, pounded flat if thick
Salt, pepper, garlic powder and Italian seasoning, to taste
1 tablespoon pizza sauce
4 slices pepperoni
1 teaspoon butter or oil
2 fresh mushrooms, sliced
2 thin green pepper rings
1 ounce mozzarella cheese, shredded

Season the chicken with salt and other seasonings; grill. Meanwhile, sauté the mushrooms and pepper rings in butter or oil until slightly tender, but not mushy; set aside. Spread the sauce over the chicken, then top with the pepperoni, the pepper rings, mushrooms and then finally, the cheese. Sprinkle with a little additional Italian seasoning, if desired. Bake at 350º about 10-15 minutes or until hot and the cheese is melted. Serve at once.
Makes 1 serving
Can be frozen but the peppers will get soft

PIZZA CHICKEN - SIMPLIFIED METHOD (No pre-grilling or pre-cooking involved)
Flatten the chicken breast slightly, if necessary, to make it an even thickness all over. Season with salt, pepper and garlic powder and place on a foil-lined baking sheet. Spread the pizza sauce over the top of the chicken then top with the pepperoni, raw mushrooms and green pepper rings. Sprinkle the vegetables with a little more salt if you like. Bake at 400º 15 minutes then top with the mozzarella cheese. Bake another 5 minutes or until the cheese is melted and the chicken is done to your liking. 





The servings were really small. Not enough alone I would make sides next time.

Pot o' gold chex

In the spirit of St. Patricks day i made another chex party mix.





Pot o’ Gold Chex® Mix

Makes:20 servings (1/2 cup each)

Tips
4cups Lucky Charms® cereal
2cups Corn Chex® cereal
1 1/2cups broken mini-pretzel twists (about 65 twists)
1cup dry-roasted peanuts
1/2cup packed brown sugar
1/4cup butter
2tablespoons corn syrup
1/8teaspoon baking soda
1/4cup green mini candy-coated milk chocolate candies
Substitution
Tiny pretzel sticks can be substituted for the twists.
Preparation Directions
1.In large microwavable bowl, place cereals, pretzels and peanuts; set aside.
2.In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on High about 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour over cereal mixture, stirring until evenly coated.
3.Microwave uncovered on High 1 to 2 minutes, stirring and scraping bowl every 30 seconds, just until cereal begins to brown. Cool 5 minutes; stir in candies. Spread on waxed paper to cool; break into bite-size pieces. Place in gold foil baking cups if desired. Store in airtight container.

Salisbury Steak, Mashed potatoes, and Corn

Salisbury Steak, Mashed potatoes, and Corn is my favorite meal! Now you can experience the tasty goodness too! This is the Recipe my mom uses.











Ingredients

  • 1 (10.5 ounce) can condensed French onion soup
  • 1 1/2 pounds ground beef
  • 1/2 cup dry bread crumbs
  • 1 egg
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon all-purpose flour
  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon mustard powder

Directions

  1. In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
  2. In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
  3. In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.
